Broccoli, Lima Beans and Fenugreek






Life has a funny way of bringing together two people. Circumstances, fate or maybe even destiny brings them together. I believe there is a reason perhaps pre-determined by some cosmic force or the universe for each and every person you come across in your life, regardless of the experience you have with them. One can never be cautious or calculative about who or when you will meet a special (or not so special) someone. 

Having said all this, I believe sometimes it’s exciting to take a chance and try out new things, meet new people to see what happens. It could be a disaster but unless you try it out there is no way you could figure that out now, can you?

Bringing together two ingredients in the culinary world could be very exciting, it can make or break the appetite, but is worth every bit of the sort of culinary catharsis you experience. 

One such ingredient in Indian cuisine is called Kasoori-Methi. It’s dried Fenugreek leaves. Just a handful of these leaves crushed on to pretty much anything including meat, vegetables, pasta, salads brings in tons of flavor. I may not have re invented the wheel with this recipe, but I think this is one culinary merger that never goes wrong.







Ingredients 

2 cups of Broccoli - roughly chopped 

1 cup of Lima beans (I used frozen Lima beans)

1 teaspoon Turmeric powder 

1/2 teaspoon Red chili powder 

1/2 cup of coconut milk 

2 Tablespoons of kassori Methi 

1 Tablespoon olive oil 

Salt 



1.     Heat a sauce pan (preferably one with a lid) with olive oil. 

2.     Once the oil is hot, add the turmeric and chili powder. 

3.     Let the spices cook in the hot oil for about 30 - 40 seconds. 

4.     Add the vegetables - Broccoli and Lima beans. 

5.     Give it a quick stir to mix the spices and veggies together. 

6.     Add the 1/2 cup of coconut milk and salt. 

7.     Cover the pan and let it cook at medium heat for about 5 minutes. 

8.     Turn off the heat, Crush the Kassori Methi in the palm of your hand and sprinkle it on the veggies.
