Quinoa with caramelized onions and eggs







Anticipation. 


There is a phenomenon in  Human Genetics called anticipation. It refers to how a hereditary disease becomes more conspicuous/prominent/severe at an early age with each passing generation. I wondered why would you give a negative phenomenon such a positive name - Anticipation. Then it occurred to me, this misery of (genetic) anticipation doesn’t stop folks from moving forward. Despite what may happen they continue to live, thrive and be happy. 



Anticipations about life. We tend to anticipate for bigger and better happenings in our life. They may or may not happen, but the joy of anticipation keeps us going.



Then, there is culinary anticipation. I anticipate cooking with exotic ingredients, coming up with fancy dishes, dishes that are in vogue right now; cooking with the latest "it" ingredient and so on and so forth. Eventually I succumb to reality and work with what's in the pantry. 



One such dish I make often when all else fails is caramelized onions with quinoa and egg. Its a simple no fuss dish. But the anticipation of tasting the sweetness of the caramelized onions and the goodness of quinoa leaves you craving for more. 



Caramelized onions and Quinoa


1 cup of quinoa - Cooked  according to the package directions. I usually cook mine with 2 cups of warm water. The warm water expedites the cooking process.

2 cups of finely chopped onions 

4 eggs 

1 tsp turmeric powder 
1/2 tsp black pepper powder 
4 cloves of garlic, chopped 
salt




1.     Heat 3 Tablespoons of olive oil in a sauce pan . 

2.     Once the oil is hot enough, add the turmeric powder  garlic and onions. 

3.     Reduce the heat to medium and let the onions cook, become brown and translucent. 

4.     Keep stirring in between. 

5.     Depending on the cooking range you use, this takes about 15 - 20 minutes. 

6.     Once the onions are lightly brown, translucent, add the 4 eggs directly in to the pan. 

7.     Add the black pepper powder and salt. 

8.     Mix it well and cook the eggs,Once the eggs are half done, add the cooked quinoa.

9. Stir everything together and cook for another minute or so until the eggs are fluffy and mixed well with the quinoa.




 We can add cooked veggies to this, chicken, shrimp, potatoes or anything you fancy. Get creative with it and have fun cooking and anticipating.
