Chocolate flax seed Muffins
Carpe diem. Living in the moment. Seems like a simple thing to accomplish, but we seldom do actually live in the moment. There is a lingering regret about the past, a jittery anticipation about the future and that leaves us with a rather vague present.
The present despite its vagueness is a rather endearing feeling. We have a choice to either make the best out of it or turn it in to something morose. Who knows what tomorrow or for that matter the next hour or so is going to be like. Living life to the fullest also means living each moment to the fullest without regrets or intangible fears.
on that positive note, a rather cheerful chocolate treat.
Dry ingredients
1 cup All-purpose flour
1/2 cup sugar
1/3 cup coco powder
3 tsp baking powder
2 tsp flax seed powder
Wet ingredients
1/3 cup olive oil
1 cup of hot water
1 egg
1 tsp vanilla extract
1. Heat the oven to 360 degrees Fahrenheit.
2. In a large bowl, add all the dry ingredients and mix them well.
3. Crack the egg in a small bowl, whisk it well and add it to the dry ingredient mixture.
4. Next, add the olive oil, vanilla extract and whisk it together
5. Add the hot water and whisk it thoroughly for about 30 - 40 seconds
6. Grease a muffin tray with olive oil - This makes about 9 muffins.
7. Add the mixture in to the muffin molds and bake for 15 - 20 minutes depending on the oven settings at 360 degrees Fahrenheit.
8. Serve the warm muffins with a few dashes of Maple syrup or honey.
