Best Berry Cobbler
The anticipation, uncertainty and hope for a fresh start.
A celebration of optimism.
A New year and New beginning.
As much as we like to move on and move forward, we can't take the right step forward, without acknowledging the past.
Having said that, one doesn't need a reason to celebrate, contemplate and continue with life.
This moment right now, right here is good enough to savor, to make resolutions, promises, set goals and learn.
And, one doesn't need an excuse to make a cobbler and that too with berries.
Ingredients
2 cups of blueberries
1 cup of cranberries
1 cup of water
I cup of Brown sugar
1 cup of All purpose flour
1 cup of Brown sugar
1/2 cup of butter
1 tablespoon baking powder
1 tablespoon vanilla essence
- Heat the oven to 350 degrees fahrenheit.
- In a large baking dish, add the 1/2 cup of butter and let it melt in the oven, while the oven is heating up to 350 degrees fahrenheit.
- Add the berries and a cup of water and sugar and let it come to boil on medium heat for 10 minutes.
- The mixture will be quite watery and it cooks and thickens in the oven. If the watery consistency is not desired, add 1/2 cup of water instead.
- While the butter is melting and the berries are boiling, sieve the flour, baking soda and mix in the sugar.
- To this add the vanilla essence and cup of milk.
- Whisk the mixture together.
- Remove the hot baking dish with melted butter and pour in the flour mixture.
- Spoon the berries and the liquid over the flour and let it bake for 25 - 30 minutes until golden brown.
- Serve hot with ice cream.
